Thomas Keller's Bouquet Garni
A bouquet garni is a classical combination of aromatic herbs and vegetables used to flavor liquids, because the herbs and vegetables are bundled with string, they can be removed easily from the liquid once they've given their flavor to it.
- 3 outer green leek leaves washed
- 5 springs Italian parsley
- 2 bay leaves
- Lay out 1 leek green. Place the herbs on top and wrap in the remaining leaves to form a circular bundle.
- Tie the bouquet garni securely with string.
